2020 is almost done, people! Can you believe it? It’s been such a slow-moving long year, if that makes sense at all. This holiday season has been strange, to say the least. No big holiday parties, but plenty of family time has been involved. We’ve made making delicious food a priority, so recipes like these antipasto skewers have played a vital role in getting us through the year.

I have been making these yummy skewers for years. We enjoy them often in the months of December and January. They are such an easy finger food to munch on, whether guests are over or not. Plus, I’m always on board when meat, cheese and artichoke hearts are involved!

How To Make Antipasto Skewers

STEP 1

In a medium bowl, combine olive oil, parsley, Mozzarella, mushrooms and artichokes. Mix well.

STEP 2

Skewer all the remaining ingredients along with the seasoned pieces until gone, making sure to put 1-2 of each on each skewer. Wrap in foil or plastic wrap and refrigerate until ready to serve. THAT’S IT!

Recipe Notes

  • Substitute olive oil with Italian salad dressing, if desired.
  • Allow the ingredients to marinate for a few hours or overnight for a more concentrated flavor before skewering them.
  • If you use cheese tortellini for this recipe, be sure to cook tortellini according to package directions first. Rinse in cold water and let cool.
  • These are great for party appetizers or even adding to your kids lunch boxes. Make them ahead of time and keep them in the fridge until ready to serve. Perfect when served at room temperature.
  • The recipe makes a lot of food. You’ll be able feed 12-15 hungry people, so modify quantities as needed.

Ingredients To Choose From

It’s fun to have different colors, shapes and flavors in mind as you select ingredients. Simply create a pattern with your ingredients as you add them to the wooden skewers.

Choose from salami, pepperoni, summer sausage, grape or cherry tomatoes, any color of bell peppers, chicken chunks, quartered artichoke hearts, fresh baby mozzarella balls, cooked tortellini or cubed cheese.

Basil leaves, black and green olives, shrimp, onions, marinated veggies, prosciutto or tortellini make great options, too.

Skewer Flavor Combos

  • If you’d like a theme, you could make Greek Antipasto Skewers with any combination of feta cheese chunks, garlic cloves, cucumber, Kalamata, bell peppers, olives and/or cherry tomatoes.
  • A Mediterranean theme would involve cold chunks of chicken, peppers, red onions, fire-roasted tomatoes, Kalamata olives, fresh mozzarella and/or marinated artichoke hearts.
  • Balsamic Glaze, Teriyaki Glaze and Italian dressing or olive oil with Italian or Greek spices.
  • Greek yogurt with lemon and spices make great options for topping or dipping your skewers if you want to dress them up.

Ingredients

  • 4 tbsp olive oil
  • 1/4 cup Italian parsley chopped
  • 8 oz mozzarella pearls
  • 9 oz whole mushrooms in a jar drained
  • 14 oz artichoke hearts quartered and drained
  • 8 oz colby jack cheese cubed
  • 4 oz sliced salami sliced, mix of genoa salami, chicken chunks, pepperoni or summer sausage are good options
  • 8 oz cherry tomatoes
  • 4.75 oz Spanish olives pitted
  • 4.75 oz Kalamata olives pitted

Instructions

      Sure! For sure a few hours ahead of time. But if you skewer them the day before, just wrap some tinfoil around them and they’ll be good to go.

      Hi Bella! That is actually thinly sliced salami (I have two types pictured). Pepperoni would be great, too, though!
